Beans that are stellar in the cup, displaying terroir - nuances that reflect the unique convergence of terrain, altitude and microclimate of an origin - fall under the specialty coffee category.

These coffees are recent harvest, often hand-picked, meticulously prepared, of the highest grade, and estate produced. What we get in the cup is the ultimate arbiter of which specialty bean makes our selection, so you can be sure our coffee offerings are truly remarkable. Our current offering of single estates:
Colombia Huila Agua Azul  ~ buttery and sweet
Guatemala El Bosque       ~ mouthfilling & complex
Kenya Gethumbwini         ~ succulent & bursting with fruits

"Coffee alchemists believe that coffee is the elixir of life and producing the many permutations of this liquid gold is their lifelong obsession.
First they gather the world's most precious Specialty beans to roast using secret profiles, and then the art of blending takes place through the process of cupping."
The Coffee Alchemists' Manifesto p.7
